TORTA DE REMOLACHA























I















El domingo pasado se cumplió un año desde que mi querida amiga Ona fué mamá. Y trajo al mundo a la bella Nora. Festejo obligado y la mejor excusa para probar una receta nueva! Una merienda de domingo llena de regalos y comida. Por suerte la tarta de remolacha fué un éxito!

Me encantan las tartas dulces hechas con base de verduras, la clásica de zanahoria, recientemente probé una buenísima de zucchini (o calabacín) que intentaré cocinar pronto y ahora esta de remolacha...que ya está entre mis preferidas!
Importante! las remolachas tienen que ser fresquitas, nada de comprar en el super las precocinadas!

Ingredientes:
  • 150grs de nueces picadas
  • 1/3 taza de semillas de amapola y de sésamo (opcional)
  • 1/3 taza de aceite de oliva
  • Ralladura de 2 limones
  • 150grs de mantequilla
  • 2 tazas de azúcar morena
  • 4 huevos
  • 3 tazas de remolachas (crudas!) ralladas
  • 3 tazas de harina integral preferiblemente, aunque puede ser blanca
  • 2 cucharaditas de bicarbonato de sodio
  • 1 cucharadita de polvo de hornear y otra de sal
  • 1 cucharada de curry
Para la cobertura:
  • 200grs de queso cremoso (tipo philadelphia
  • 35grs de azúcar glass (o impalpable)
  • Ralladura de 1 limón
  • 2 cucharadas de miel
  • 70grs de mantequilla

Pasos:
  • Precalentar el horno a 180º y enmantecar y enharinar un molde redondo de 20cm mas o menos. O 2 moldes de budin.
  • En un bowl pequeño mezclar las nueces picadas, la ralladura de limón, las semillas de amapola y sésamo.
  • En un bowl grande batir la mantequilla hasta que este cremosa, añadir el azúcar y batir otra vez. Luego el aceite y volver a batir. Añadir los huevos uno a uno mientras sigues batiendo. Por último añadir la remolacha rallada y mezclar bien o batir suavemente por unos segundos...
  • En otro bowl mezclar la harina integral, el bicarbonato, el polvo de hornear, la sal y el curry.
  • Añadir la mezcla de ingredientes secos a los húmedos en dos partes, mezclando bien para que no queden grumos. 
  • Añadir la mezcla de las nueces y volver a mezclar. Pero evita revolver demasiado, tiene que quedar una mezcla densa.
  • Luego verter la mezcla en el molde (el el caso de que sean 2 separar en partes iguales, para que la cocción sea uniforme) y hornear durante 40-45min.
  • Retirar del horno y dejar enfriar bien.
Pasos para la cobertura:
  • Batir la mantequilla hasta que quede cremosa, añadir la miel y el azúcar glas y volver a batir. Por último el queso cremoso y batir bien.
  • Con una cuchara añadir la ralladura y mezclar bien.
  • Guardar la cobertura en la nevera un par de horas y cuando el bizcocho esté bien frío cubrir. 
  • A disfrutar!





ENGLISH VERSION: BEETROOT CAKE

This sunday we celebrate 1 year since my good friend Ona gave birth to beautiful Nora! I thought it was a good ocassion to try a new recipe! An afternoon full of presents and food. And luckily the cake was a success!

I love sweet cakes with a vegetable as a base. The classic carrot cake, a new zucchini cake that just tried and now this one that has fast became one of my favorite!
Is key to do it with fresh beetroot and not the cooked one that you can buy in the super market!

Ingredients:

  • 150grs chopped walnuts
  • 1/3 cup poppy and sesame seeds (optional)
  • zest of two lemons
  • 150grs unsalted butter
  • 2 cups of brown sugar
  • 4 large eggs
  • 3 cups grated beetroots (about 3 medium) as fresh as you can find
  • 3 cups whole wheat pastry flour (or all-purpose flour)
  • 1 1/2 teaspoons baking soda
  • 2 teaspoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon curry powder (optional) 

Icing:

  • 200grs cream cheese (at room temperature)
  • 70grs unsalted butter
  • 35grs icing sugar
  • 2 big spoons of honey
  • zest of 1 lemon


Steps:

  • Preheat your oven to 350°F. Butter the cake tin and the add some flour. 
  • In a small bowl combine the walnuts, poppy  and sesame seeds and lemon zest.
  • In a mixer, beat the butter until fluffy. Add the sugar and oil and beat again until mixture comes together. Add the eggs one at a time mixing well and then stir the beetroot (low speed if you are using a mixer).
  • In a separate bowl, combine the whole wheat pastry flour, baking soda, baking powder, salt and curry powder. Add these dry ingredients to the wet ingredients in two batches, stirring between each addition.
  • Fold in the walnut, seeds and lemon zest mixture. Avoid over mixing the batter, it should be thick and moist.
  • Bake for about 40-45 minutes on a middle oven rack. Remove from the oven and cool
Steps for the icing:
  • Beat the butter until it gets creamy and add the icing sugar and honey. Add the cream cheese and beat again. 
  • With a spoon mix the lemon zest.
  • Let the icing cool in the fridge for a couple of hours and the spread waves of icing over the cake, when the cake is cold.
  • Enjoy!
